This weeks snack Sunday creation, Spicy Pine, was inspired by today’s great weather, and the beach trips my family and I took in South Africa. Spicy pine was sold on every beach front in Durban, a delicious combination of sweet and spicy, a skewed pineapple smothered in chilli.
When I was younger it was taken for granted that you would stop by a little stall, with an indian aunty selling you spicy pine, and devour it before getting in the car, with wet hair and sand still in your ears. I really wish I could go to the beach, but I’m in London, so not today. But have a go, it’s really quick and easy, and a healthy snack too, great for the summer!
2 parts Chilli Powder (2 teaspoons)
1 part Salt (1 teaspoon)
1. Cut your pineapple. Start by cutting the ends off. Then cut in half, and half again to quarter it.
2. In a bowl combine the chilli powder and salt together.
3. Skewer the pineapple quarters. Place the skewed pineapple in the bowl and,using a tablespoon to help you, cover the pineapple in the chilli powder and salt mix.
